You may want to brush or spray a little oil over the rice for extra crispiness. Place in the oven and cook for 15–20 minutes, or until the rice is crispy.\u003cbr\u003e\u003cbr\u003eAdd the \u003cstrong\u003ecashews\u003c\/strong\u003e for the final 5-10 minutes to toast.\u003c\/p\u003e\n\u003ch5\u003eSTEP 4\u003c\/h5\u003e\n\u003chr\u003e\n\u003cp\u003eTrim the ends of the cucumber, and place it on a chopping board. Smash it gently along the length using a rolling pin or a heavy pestle until it splits, then chop diagonally into bite-sized chunks.
