We have perfected the ultimate smash burger recipe - meaty, juicy, umami-rich - which works perfectly in a crispy folded taco, filled with a fresh, nutrient rich slaw of red cabbage, apple, carrot and walnut, and a house made 'burger sauce'. Tastes like a cheat meal but is the total opposite - high protein, high fibre and full of whole food ingredients like vegetables, beans, nuts and seeds.

Before you start, take out all the ingredients for this recipe (see 'what’s in your box' section below). Thoroughly wash all fresh vegetables, leaves, salad ingredients and raw grains before cooking or serving.

STEP 1

Take out a large frying pan and two mixing bowls.

STEP 2

To prepare the slaw, cut and remove the core of the apple. Top and tail the carrot (peel if you prefer), and remove the hard core of the red cabbage. Julienne all of them into uniform, thin shreds (use a mandoline if you have one).

Place them in one of the mixing bowls and season with the juice of half a lime, a drizzle of olive oil, and salt and pepper to taste. Roughly chop the walnuts, fold them in, and set aside.

Cut the remaining lime into wedges for garnish and set aside.

STEP 3

To prepare the burger mixture, place your frying pan over medium-low heat and dry toast (without oil) the gram flour for 2 minutes, stirring occasionally, until it becomes golden.

Drain the black beans and transfer them into the other mixing bowl. Roughly mash them with the back of a fork. Add the toasted gram flour and the patty flavour bomb, then stir well to combine.

STEP 4

Wipe clean the frying pan you used for toasting the gram flour and place it over medium heat and add a drizzle of olive oil.

While the oil heats up, divide the burger mixture and spread it on each of the flour tortillas in an even layer around 2-3mm thick. Place them on the pan with the burger mixture side down and press with a spatula and cook for 4-5 minutes until the mixture starts to caramelise. Flip it onto the other side and cook further 30-60 seconds until the tortilla is golden. Cook in a few batches depending on the size of your frying pan, adding more oil for each batch.

STEP 5

To serve, add a dollop of the burger sauce on each of the burger tortillas and fold them in half. Plate them up along with the slaw and lime wedges. You can either stuff the inside of the tortillas with the slaw or place it on top of the folded tacos. Enjoy!
