Gluten-free corn tortillas are stuffed with chipotle spiced sweet potato and black beans, then baked in the oven until crispy. Served with fresh and crunchy shredded gem lettuce, zingy cherry tomato salsa fresca and fermented cashew 'feta crema. It ticks off half of your daily recommended fibre intake in one delicious meal!
NB: you can shallow fry or bake the taquitos for an oil free version.
