High Protein Soba Noodle Salad With Kimchi, Green Vegetable Medley, Lime Satay Sauce & Super Seed Topping

Cooking instructions

Before you start, take out all the ingredients for this recipe (see picture above) and rinse any raw grains, herbs or vegetables.

STEP 1

Boil your kettle and take out two saucepans. Fill the two saucepans with boiling water, place over a medium heat and bring to the boil

STEP 2

Place the soba noodles into one of your saucepans and boil until al dente, around 4-5 minutes. Drain and rinse to cool.

STEP 3

Cut the tenderstem broccoli in half then add to your other saucepan of boiling water and blanch for 2 minutes. Add the sugar snap peas and edamame and blanch for a further 1 minute. Drain and rinse everything under cold water to cool. Peel the carrot into ribbons with a peeler.

STEP 4

To assemble the salad, add the soba noodles, broccolicarrot, edamame and sugar snap peas to a large mixing bowl. Pour over the lime satay sauce and toss well to combine. Divide into two bowls and sprinkle over the super seed topping and serve with the kimchi. Enjoy!
