Super Green Gnocchi With Creamy Spinach & Kale Sauce, Garden Peas, Vegan Burrata & Chilli Pine Nut Crumb

Cooking instructions

Before you start, take out all the ingredients for this recipe (see picture above) and rinse any raw grains, herbs or vegetables.

STEP 1

Boil your kettle, then take out a large saucepan and a frying pan.

STEP 2

Pour boiling water from your kettle into your saucepan along with some sea salt and place over a medium-high heat. Once bubbling, add the gnocchi and peas and cook for 1 minute. Drain, reserving a little of the pasta water.

STEP 3

Add the gnocchi and peas back into the pot, then add the super green sauce. Stir and simmer for 2-3 minutes or until the sauce has warmed through and slightly thickened. 

STEP 4

Meanwhile toast the chilli pine nuts by dry frying (without oil) in your frying pan over a medium heat for 1-2 minutes. Watch carefully to make sure the don't burn. Set aside.

STEP 5

To serve, spoon the saucy gnocchi and peas into bowls, then top with the superstraccia and chilli pine nuts (spicy!).
