Green Goddess Nourish Bowl With Fluffy Quinoa, Creamy Avocado, Toasted Mixed Seed 'Granola' & Zingy Green Tahini Dressing
Cooking instructions
Before you start, take out all the ingredients for this recipe (see picture above) and rinse any raw grains, herbs or vegetables.
STEP 1
Boil your kettle. Take out a saucepan and a frying pan.
STEP 2
Rinse the quinoa and add to medium sized pot and cover with plenty of water. Bring to a boil and then lower the heat to a high simmer. Cook until al dente, around 8 minutes.
STEP 3
Meanwhile, peel the courgette into ribbons and add to a large bowl. Roughly chop the lettuce and finely slice the radishes and add these to the bowl along with the edamame and cooked quinoa. Drizzle the dressing over everything in the bowl and toss well.
STEP 4
Toast the seed topping by dry frying (without oil) in your frying pan. Cut the avocado in half and scoop out the flesh.
STEP 5
Divide the salad between serving bowls, then add the avocado and scatter over the seed topping. Enjoy!
