The secret to our caponata sauce is that it's made from hand-chopped fresh tomatoes, which add an amazingly rich, yet fresh tasting sauce. We cook it low and slow with garlic and capers until rich and flavoursome, then stir it through roasted peppers and aubergines and protein-packed butter beans. Served with a zingy salsa verde and a freshly baked organic toasted ciabatta for dunking in.
