This autumnal squash dish is inspired by risotto, but made so much healthier by swapping out the traditional arborio rice for the nutritionally superior spelt. It’s a nutty, chewy grain that works so well with the super creamy miso butternut squash sauce. Finished off with a smoky pine nut drizzle and crispy sage.
