Romesco is the star of the show in this dish and the ultimate summer sauce, made with roasted red peppers, almonds and a zingy drizzle of premium sherry vinegar. We're serving it with tender grilled aubergines, a fibre and protein-rich bulgar wheat and chickpea pilaf, then finishing with garlic tahini sauce and a herby caper gremolata. Delicious!
