Ras El Hanout Sweet Potato & Tofu Bowl With Green Tahini & Sumac Onion Cucumber Salad

This is chef Christina Soteriou's ras el hanout spiced sweet potato and tofu bowl with a thick herby tahini sauce and sumac onion cucumber salad on the side. It's a lovely balance of flavours and textures which are fresh and light, but also super filling. It's high in protein (almost 30g), fibre and healthy fats, but very low in carbs so great if you're looking for a lean, lower carb dish!
