This is Christina Soteriou's seasonal spin on a caesar salad, featuring butternut squash, cavolo nero, tender orzo, smokey marinated tempeh 'lardons', candied almonds and a creamy, umami-rich caesar dressing drizzled all over everything. We've snuck protein into this dish wherever we could, from the tempeh to the dressing, plus there's lots of high fibre vegetables, polyphenol rich nuts and tempeh as a fermented protein source is great for gut health.
